Terroir & Vines
The vines are planted one of the highest limestone plateau in the Languedoc (320 m high). We operate to a plot selection of the highest density vines (6000 vines/ha). The warm and dry Mediterranean climate is tempered by the altitude and a continental influence from the Larzac plateau. A wine made from a blend of Vermentino (45%), Roussanne (35%) et Marsanne (20%).
Vinification & Ageing
The grapes are hand-picked with sorting of the grapes. Then, they stay 24h in a refrigerated waggon to get in tank at 10°C. A second sorting is realised before destemming then we operate to a vertical pressing giving an elegant bright juice. Fermentation is done in stainless steel tank with temperature control (16-18°C). Ageing is done in stainless steel tank during 4 months.
A golden color which offers an intense tropical fruit aromas on the nose. The palate is characterized by a rare finesse of the structure and purity of the fruit.

Serve chilled as an aperitif or with a fresh goat cheese or a pear pie.
