Terroir & Vines
The highest schist slopes of the appellation (300 m high), in a valley receiving the last beams of the setting sun. The soil structure and composition bring about naturally low yields and wines with a rare elegance. The Mediterranean warm and dry climate is moderated by the altitude. A blend of Syrah (60%), Grenache (25%) and Carignan (15%).
Vinification & Ageing
The machine harvesting is done during the night to protect the aroma’s freshness ; a hand-picking is done in case of steep slopes or bush vines. Once the destemming is done, the fermentation takes place in stainless steel tanks at 25°C. A 10-15 days maceration allows an optimal diffusion of aromas and colour. The malolactic fermentation is made in stainless steel tanks. A 1/3 of the cuvée is aged during 10 months in French oak barrels (1/3 new, 1/3 1 year old, 1/3 2 years old), the other 2/3 aged in stainless steel tanks.
An intense garnet colour offers a very expressive nose where red and black fruit aromas are blending together with spicy and mineral notes. A beautiful balanced palate offers round tannins, a remarkable freshness and an elegant spicy finish.

To be tasted at 16-17°C with grilled meats, a game stew or matured cheese.
