Terroir & Vines
The vines are planted on a Jurassic limestone soil from the sea on the Aumelas plateau. The warm and dry Mediterranean climate is tempered by the altitude. Syrah is mostly present (70%) in this cuvée, Grenache (30%) comes complete the blend.

Vinification & Ageing
The grapes are harvest by a machine then they are destemming. We realizes a cold pre-fermenting maceration before the fermentation in stainless steel tanks (25-28°C) with daily pumping over (1 to 4 per day) and 1 or 2 rack and returns. We operate to a long maceration for an optimal extraction. The wine stays 12 months in French oak barrels (¼ new, ¼ 1 year old, ¼ 2 years old and ¼ 3 years old).

Tasting Notes
A wine with a deep garnet colour and a complex nose with black fruit and cocoa notes. The palate is spicy and silky with a smooth vanilla finish.

Food & Wine Pairing
To be tasted at 16-17°C with a grilled rib steak, a game stew or matured cheese.
