Terroir & Vines
The vines are planted on a Jurassic limestone soil from the sea on the Aumelas plateau. The warm and dry Mediterranean climate is tempered by the altitude. A blend of Grenache noir (50%), Syrah (30%) and Carignan (20%).
Vinification & Ageing
The grapes are harvest by night to preserve the aromatic freshness of the grapes. Then they are directly pressed to be let in stainless steel tanks for the fermentation at low temperature (15-17°C). This rosé stays 6 months in French oak barrels (1/4 new, 1/4 1 year old, 1/4 2 years old and 1/4 3 years old) for 20% of the cuvée.
A deep pink colour for this wine, it offers an intense and fruity nose with strawberry, caramel and vanilla aromas. The palate is round, with vanilla notes from the barrel ageing.
Food & Wine Pairing
Best served chilled as an aperitif, with grilled prawns or Asian cuisine.
