Terroir & Vines
The vines are planted on a Jurassic limestone soil from the sea on the Aumelas plateau. The warm and dry Mediterranean climate is tempered by the altitude. A blend of Roussanne (70%), Vermentino (20%) and Marsanne (10%).
Vinification & Ageing
The grapes are harvest by night to preserve the aromatic freshness of the grapes. Then they are directly pressed to be let in stainless steel tanks for the fermentation at low temperature (15-18°C). This withe wine stays 6 months in French oak barrels (1/4 new, 1/4 1 year old, 1/4 2 years old and 1/4 3 years old) for 20% of the cuvée.
A light gold with green tints which offers white-fleshed fruit and flower aromas with vanilla and toasted notes. The palate is well balanced between freshness and roundness, with a smooth fruit and vanilla finish.

To be tasted chilled with a hard cheese, a fish in sauce or a white meat.
