Terroir & Vines
A selection of the highest schist slopes of the appellation (300 m high), where the vines are directly deep rooted in the Visean schists dating from 350 million years ago. The soil structure and composition bring about naturally low yields and wines with a rare elegance. Warm and dry Mediterranean climate, tempered by the altitude. A blend dominates by Carignan (40%) and completed with Syrah (30%) and Grenache (30%).
Vinification & Ageing
Hand-picking in case of steep slopes or bush vines. Destemming. Fermentation in stainless steel tanks at 25°C with a 10-15 days maceration. Malolactic fermentation in stainless steel tanks. 1/3 of the cuvée aged 10 months in French oak barrels (1/3 new, 1/3 1 year old, 1/3 2 years old), the other 2/3 aged in stainless steel tanks.
A wine with an intense & bright garnet colour. Really expressive nose with red fruits and fresh dark fruits (raspberry, blackcurrant), spicy notes (white pepper et fennel). Smooth and complex palate with fine tannins, a lot of freshness and a spicy final.
Food & Wine pairing
To be tasted at 16-17°C with grilled meats, a game stew or matured cheese.
