Terroir & Vines
The estate draws its name from the quartzite steep cliff which dominates its vineyard, near the village of Causses-et-Veyran. The vineyard is implanted on Ordovician schist hillsides, mainly with a southern-east exposure.
A blend of Grenache (60%), Syrah (20%) and Carignan (10%).
The grapes are machine harvested during the night to preserve its aromatic freshness. They are then destemming and direct pressed under inert gas. A cold static settling is made before the fermentation who takes place at 15°C in stainless steel tanks.
The wine has a pink colour with purple tints and an expressive nose with fresh red fruit aromas (strawberry, gooseberry). The palate is well-balanced with a long fruity finish.
Food & Wine Pairing
Serve chilled (10°C) with white meat, a summer salad or a raspberry shortcake.
