Terroir & Vines
A selection of the highest schist slopes of the appellation (300 m high), where the vines are directly deep rooted in the Visean schists dating from 350 million years ago. The soil structure and composition bring about naturally low yields and wines with a rare elegance. The warm and dry Mediterranean climate is tempered by the altitude.
A blend of Syrah (60%), Grenache (25%) and Carignan (15%).
Vinification & Ageing
The machine harvesting is done during the night to protect the aroma’s freshness ; a hand-picking is done in case of steep slopes or bush vines. Once the destemming is done, the fermentation takes place in stainless steel tanks at 25°C. A 10-15 days maceration allows an optimal diffusion of aromas and colour. The malolactic fermentation is made in stainless steel tanks. A 1/3 of the cuvée is aged during 10 months in French oak barrels (1/3 new, 1/3 1 year old, 1/3 2 years old), the other 2/3 aged in stainless steel tanks.
Tasting Notes
The intense garnet colour offers a very expressive nose with wild berry (raspberry, blackcurrant), spicy and mineral notes. The palate is well balanced and fresh with round tannins, a remarkable freshness and an elegant spicy finish.
Food & Wine Pairing
To be tasted at 16-17°C with grilled meats, a game stew or matured cheese.
