Terroir & Vines

The estate draws its name from the quartzite steep cliff which dominates its vineyard, near the village of Causses-et-Veyran. The vines are planted on Ordovician schist hillsides, facing South South-East.

Vinification & Ageing 

The grapes are hand-picked and then placed in stainless steel tanks at controlled temperature (25°C) to be fermented . A long maceration of the Syrah takes place during 20 days. The malolactic fermentation is also made in stainless steel tanks. The ageing lasts 12 months in stainless steel tanks.

Tasting notes

The wine has an intense black colour and a black fruit and pepper nose with smoky notes. The palate is rich and smooth with black fruit aromas.

Food & Wine pairing

Best served at 16-17°C with lamb grills or venison (dear with cranberries, quail with currants).
