Selection of the top quality plots on schist slopes. The soil structure and composition bring about naturally low yields and wines with a rare elegance.
Warm and dry Mediterranean climate, tempered by the altitude.
Vinification & Ageing
Green harvesting. The grappes are hand-picked the stocked in boxes in a refrigerated truck. Destemming and sorting. Vatting in small wood tanks of 30 hl. Cold pre-fermentation maceration.. Strong extraction (when the fermentation starts) : cap-punching, rack and return. Malolactic fermentation in new barrels.
12 months ageing in new barrels of 340 litres.
Tasting Notes
Purple carmine colour. Complex and intense aromas of spices, licorice and blackcurrant. Powerful attack on the palate followed by a beautiful roundness, typical from Faugères. Long finale on the palate on torrefaction notes.
Food & Wine Pairing
To be tasted at 16-17°C with braised meats or game stew.
