Terroir & Vines
The vines are planted on a Jurassic limestone soil from the sea on the Aumelas plateau. We operate to a plot selection of the oldest Syrah from the estate. The warm and dry Mediterranean climate is tempered by the altitude. A plot selection of the oldest Syrah (80%) completed by Grenache noir (20%).
Vinification & Ageing
The grapes are hand-picked with sorting. We operate to a cold pre-fermenting maceration then fermentation is realised in oak truncated-cone tanks and in stainless steel tanks (25-28°C) with daily pumping over (1 to 4 per day) and 1 or 2 rack and returns. We prefer use a long maceration for an optimal extraction. The wine stays 12 moths in French oak barrels (50% new, 50% 1 year old). When ageing complete, the best barrels are selected for blending.
A really intense red colour, almost black with ruby tints which gives an expressive nose, with freshly roasted coffee, wild berry and pepper aromas. The palate is well-structured and silky with a long spicy finish.

To be tasted at 16-17°C with a leg of lamb or grilled lamb with herbs.
