Terroir & Vines
Selection of the oldest vines of the estate, on schist terraces facing south.The soil structure and composition bring about naturally low yields and wines with a rare elegance. The warm and dry Mediterranean climate is tempered by the altitude.
A plot selection of the oldest Syrah (80%) completed by Grenache noir (20%).
Vinification & Ageing
The grapes are hand-picked when they are slightly over-ripe, then sorted and destemmed before they are placed into in an oak truncated-cone tank where the fermentation takes place. The temperature is maintained between 25 and 28°C. At the beginning, daily punching down and 2 racks and returns, then daily pumping over for a better colour and tannin extraction. The maceration is made during 20-25 days and the malolactic fermentation takes place in barrels. The ageing is made during 12 months in French oak barrels (50% new, 50% 1 year old).
An intense purple colour offers a very expressive nose with black fruit, liquorice, spices and toasted bread notes. The palate is powerful and well-structured with silky tannins and a long liquorice finish.
Food & Wine Pairing
Best served at 16-17°C with a veal tagine and prunes, a grilled rib of beef with aromatic herbs or duck breast with mushrooms.
