Terroir & Vines
The vineyard is planted on a rocky red clay on limestone down the Gardiole mountain on the Aresquiers barrier beach. The warm and dry Mediterranean climate is tempered by a sea influence. Only Muscat petits grains is used for this cuvée.
Vinification & Ageing
The muscat is hand-picked when slightly over-ripe, early in the morning. Once it is pressed, the grapes are placed in French oak barrels (new and 1 year old) for the fermentation. When 60 g/l of residual sugar is reached, the must is racked, filtered and cooled to stop alcoholic fermentation. The ageing lasts 6 months on fine lees in French oak (new and 1 year old).
This wine has a golden colour and a rich and powerful nose with lychee, dry fruit, jasmine and vanilla aromas. The palate is smooth and aromatic; it reaches the perfect balance between sweetness, alcohol and crispiness.
Food & Wine Pairing
To be tasted chilled (10°C) for the aperitif, with a blue cheese, a fruit tart or a chocolate dessert.
