Terroir & Vines
The vines are planted on rocky red clay on limestone down the Gardiole mountain on the Aresquiers barrier beach. The warm and dry Mediterranean climate is tempered by a sea influence. A blend of Muscat petits grains (60%) and Sauvignon (40%).
Vinification & Ageing
Muscat grapes are harvest at the optimum maturity then pressed and placed in steel tanks for the fermentation at low temperature. The fermentation is stopped by filtration and cool temperature. Sauvignon grapes are early picked off, then pressed and let in contact with the lees from the must. Fermentation at low temperature in stainless steel tanks. The blending is aged 3 months in stainless steel tanks.
A wine with pale yellow colour giving a complex nose with aromas typical from Muscat (exotic fruit, citrus fruit) and Sauvignon blanc (white flower, boxwood). The palate is well balanced between sweetness and freshness.
Food and Wine paring
Serve at 10°C for the aperitif, with a blue cheese, a fruit tart or a chocolate dessert
