Terroir & Vines
The vines are planted one of the highest limestone plateau in the Languedoc (320 m high). The warm and dry Mediterranean climate is tempered by the altitude and a continental influence from the Larzac plateau. A blend majority dominate by Syrah (75%) and completed by Grenache noir (20%) et Mourvèdre (5%).
Vinification & Ageing
The grapes are hand-picked with sorting. Fermentation is realised in glazed concrete tanks with temperature control and daily pumping overs. Then we operate to a long maceration of the Syrah (15-20 days). The wine stays 10 months in demi-muids for 1/3 of the cuvée, in concrete tanks for the rest of the cuvée.
A dark red color wich offers expressive jammed fruit aromas with spicy notes. The palate is characterized by an intense structure and a beautiful sucrosity.
Food & Wine Pairing
To be tasted at 16-17°C with a grilled rib steak, a game stew or matured cheese.
