Terroir & Vines
The vineyard is planted on a red clay soil covered with chalky round pebbles. We select the vines of the Languedoc Grès de Montpellier AOP part of the estate, with splitting of the buds in the spring and loosening of the bunches at veraison. The warm and dry Mediterranean climate is tempered by a sea wind influence. The estate is located in the middle of a well preserved ecosystem of Mediterranean scrubland.
Vinification & Ageing
The grapes are machine harvested with on board sorting during the night to preserve its aromatic freshness. The fermentation takes place in oak truncated-cone vats and stainless steel tanks at 23-28°C. Daily pumping over and two rack and returns allows an optimal colour and aromas extraction. A long maceration of the Syrah is made. The ageing lasts 12 months: 50% in French oak barrels (25% new, 25% 1 year old, 25% 2 years old and 25% 3 years old). The remaining wine is aged in stainless steel tanks.
This wine has an intense red colour and a complex nose with red berry and spicy scrubland aromas. The palate is very well balanced and silky with fruity and spicy aromas and a long minty finish.
Food and Wine paring
To be tasted at 16-17°C with venison or a veal tagine and prunes.
