Terroir & Vines

The vineyard is planted on a tertiary marl terraces on limestone. The warm and dry Mediterranean climate is tempered by the sea winds. The estate is located in the middle of a well preserved ecosystem of Mediterranean scrubland.

Vinification & Ageing

The grapes are machine harvested with on board sorting during the night  so as to keep the aromatic freshness of the grapes.  Then, a direct pressing and a cold static settling are made. The fermentation takes place in 500 litres oak truncated-cone barrels for the high-quality for the most beautiful Roussanne and Marsanne and in stainless steel tanks for the rest of the cuvée. The ageing lasts 4 months, ¼ in 500 litres barrels and in stainless steel tanks on fine lees for the rest.
L’élevage a lieu durant 4 mois, ¼ de la cuvé en barriques de 500 litres, le reste en cuve inox sur lies fines.

Tasting notes

This white wine has a golden colour and an intense and complex nose with fruity (peach, passion fruit), vanilla and toasted bread aromas. The palate is full and round with a smooth white-fleshed fruit finish.

Food & Wine pairing

To be tasted chilled (10-12°C) with prawns “flambées” with Pastis, fish in sauce or a curry chicken.

Ageing potential

Can be laid down for up to 5-6 years. Aromas will then evolve toward honey and beeswax notes.
