Terroir & Vines
The vineyard is planted on a rocky red clay on limestone down the Gardiole mountain on the Aresquiers barrier beach. The warm and dry Mediterranean climate is tempered by a sea influence.
Vinification & Ageing
The grapes are picked when they are slightly under-ripe to obtain a perfect balance in the juice (fresh aromas and good acidity). The machine harvesting is made during the night to take advantage from low temperatures and avoid must oxidation. A contact with the lees from the must is made during 4-10 days. The fermentation takes place at low temperature (15°C) in stainless steel tanks. The ageing lasts 6 months in stainless steel tanks or concrete vats on fine lees.
The colour is very pale with green tints and the nose is an explosion of passion fruit and citrus fruit aromas, with floral notes. The palate is fruity, with floral and vegetal aromas (honeysuckle, boxwood) and a fresh finish.
Food and wine paring
Serve chilled (10°C) for the aperitif, with a fresh goat cheese or a fruity dessert.
