Terroir & Vines
The vineyard is planted on a rocky red clay on limestone down the Gardiole mountain on the Aresquiers barrier beach. The warm and dry Mediterranean climate is tempered by a sea influence.
Vinification & Ageing
The grapes are hand-picked when fully ripe, early in the morning to preserve aromas. Once it is sorted and pressed, the fermentation takes place at 15°C in stainless steel tanks. Grapes alcohol is added to stop fermentation and keep 110 g/l of residual sugar. The ageing lasts 6 months in stainless steel tanks or concrete vats on fine lees.
This muscat has a pale with golden tints and a complex nose with aromas of fruit (apricot, mango, citrus fruit), flower (linden, jasmine) and spices (cardamom). The palate is aromatic richness on the palate with a persistent and fresh finish.
Food and Wine paring
Serve chilled (10°C) for the aperitif, with foie gras, blue cheese or a chocolate dessert.
