Terroir & Vines
The vineyard is planted on chalky-clay terrace. The warm and dry Mediterranean climate is tempered by the sea winds. The estate is located in the middle of a well preserved ecosystem of Mediterranean scrubland.
Vinification & Ageing
The grapes are machine harvested with on board sorting during the night so as to keep the aromatic freshness of the grapes. Then, a direct pressing and a cold static settling are made. The fermentation takes place in stainless steel tanks and oaked French tanks at low temperature (15-18°C). The ageing lasts 4 months in stainless steel tanks on fine lees and 30% in French oak barrels.
Tasting notes
This Chardonnay has a pale yellow colour with green tints and a nose with fresh fruit (grapefruit, exotic fruit) and white flower (honeysuckle) aromas and toasted notes. The palate is fresh and well balanced with fruit and vanilla aromas and a round finish.
Food & Wine pairing
To be tasted at 10-12°C for the aperitif, with seafood, fresh cheese or an apricot pie.
