Terroir & Vines
The vineyard is planted on chalky-clay terrace. The warm and dry Mediterranean climate is tempered by the sea winds. The estate is located in the middle of a well preserved ecosystem of Mediterranean scrubland.
Vinification & Ageing
The grapes are machine harvested with on board sorting. Once its is destemmed, the fermentation takes place in stainless steel tanks between 23 and 28°C. Daily pumpings over, longer and more frequent at the beginning of fermentation allows an optimal aromas and colour extraction.
This Pinot Noir has a bright red colour and an expressive nose with red fruit (cherry), smoky and mineral notes. The palate is fruity with a fine structure and round tannins.
Food & Wine pairing
To be tasted at 16-17°C with deli-meats, a beef steak or a vegetable pie.
